Storceag: The Soup That Doesn't Exist in Any City Restaurant
Storceag is a sour fish soup specific to the Lipovan community. You won't find the authentic recipe in any city restaurant.
The three rules
- The fish — pike, perch or crucian carp, caught in the morning. Never frozen.
- The sour liquid — natural fermented wheat bran, not vinegar.
- The lovage — added at the end, in generous quantities.
In the morning, Alex goes fishing before 6 AM. Storceag is served with polenta and sour cream on the pontoon.
